It’s one of my favorite tools in the kitchen. It makes eating healthy quick and easy. This Air Fryer chicken and veggies makes cooking dinner easy. They cook in the air fryer at the same time!

- Budget Friendly – even though this recipe is loaded with protein and vegetables it’s actually pretty cheap to make! I got all of the ingredients at Aldi’s. You can also most of these ingredients at your local farmers market as well.

Ingredients
- Boneless Skinless Chicken Breast – I used boneless skinless chicken breast for this recipe, but you can use any cut of chicken that you prefer.
- Avocado oil – I always use avocado oil for high-heat cooking.
- Radishes
- Zucchini
- Bell Pepper
- Onion
- Garlic
- Seasoning: salt and black pepper



Tips & Tricks
To ensure that the chicken stays moist is to check the internal temperature with a meat thermometer. Once they reach 165F, remove them from the air fryer. Don’t overcook.
Tools to make this recipe
- Cosori Air Fryer – this is my favorite air fryer. The large air fryer basket makes it so easy to cook your favorite recipes
- Tongs – tongs are easiest to remove and flip the chicken and fries.
- Meat thermometer – You always want to make sure the internal temperature of ANY chicken 165F.
How to make Chicken and Veggies in the Air Fryer
- Chop the vegetables into bite-size pieces adding them to a large mixing bowl.
- Then you will need to cut your chicken breast into bite-size pieces. About 1 inch cubes. Place them into another mixing bowl.
- Take your avocado oil, salt, black pepper, and minced garlic and split them between the two bowls.
- Mix them all around so both the vegetables and chicken are coated with the seasonings.
- Transfer the chicken to the bowl of vegetables and mix the chicken in.
- Place the chicken and vegetables into an Air Fryer basket. You may have to do these in batches.
- Cook the chicken and vegetables at 390F for 12 minutes. Flipping them halfway through.
- Remove from the Air Fryer basket and serve.
This air fryer chicken and veggies recipe serves 4. I made this in 3 separate batches, but I probably could have done it in 2. Per serving it has 271 calories, 11g carbohydrates, 4g fiber, 26g protein, and 14g fat.
If you want to reduce the fat in this recipe, you can cut the oil in this recipe. You can even try spraying the chicken and vegetables with cooking oil instead.






























Oven Directions
- Preheat the oven to 400F.
- Chop up all the chicken and vegetables into bite-size pieces.
- Place chopped-up chicken and vegetables in a large mixing bowl.
- Add avocado oil, garlic, salt, and pepper to the large mixing bowl and mix together.
- Place chicken and veggies on a cookie sheet and bake for 25 minutes.
- Remove from the oven and enjoy!
Substitutions
For this recipe you can basically use any of your favorite vegetables. If you don’t like radishes, you can use broccoli instead. Can’t find zucchini, use yellow squash instead. Not a huge fan of onions? Swap them for mushrooms instead.
What to serve with Air Fryer Chicken and Veggies
This chicken and vegetable recipe is delicious just as it is. It’s a high protein low carb recipe, great if you’re following a low carb or keto diet.
It doesn’t really need a side, but you can always serve it with white rice or cauliflower rice.



How to store
- Store leftover chicken and veggies in a glass airtight container in the refrigerator for up to 5 days.
- For meal prep, you can freeze a meal up to 3 months
How to reheat
Transfer the chicken and veggies to a microwave safe plate and microwave on high for 1.5-2 minutes or until the internal temperature reaches 165F.
