It’s one of my favorite tools in the kitchen. It makes eating healthy quick and easy. This Air Fryer chicken and veggies make cooking dinner easy. They cook in the air fryer at the same time! In 15-20 minutes, you get a quick, nutritious dinner.

- Boneless Skinless Chicken Breast – I used boneless skinless chicken breast for this recipe, but you can use any cut of chicken that you prefer. Chicken wings will do as well.
- Avocado oil – I always use avocado oil for high-heat cooking.
- Radishes
- Zucchini
- Bell Pepper
- Onion
- Garlic
- Seasoning: salt and black pepper

Tips & Tricks
To ensure that the chicken stays moist, check the internal temperature with a meat thermometer. Once they reach 165F, remove them from the air fryer. Don’t overcook.

- Tongs – tongs are easiest for removing and flipping the chicken and fries.
- Meat thermometer – Always make sure the internal temperature of ANY chicken is 165°F.
How to make Chicken and Veggies in the Air Fryer
- Chop the vegetables into bite-sized pieces and add them to a large mixing bowl.
- Then you will need to cut your chicken breast into bite-sized pieces. About 1-inch cubes. Place them into another mixing bowl.
- Take your avocado oil, salt, black pepper, and minced garlic and split them between the two bowls.
- Mix them all around so both the vegetables and chicken are coated with the seasonings.
- Transfer the chicken to the bowl of vegetables and mix it in.
- Place the chicken and vegetables into an Air Fryer basket. You may have to do these in batches.
- Cook the chicken and vegetables at 390F for 12 minutes. Flipping them halfway through.
- Remove from the Air Fryer basket and serve.
This air fryer chicken and veggies recipe serves 4. I made this in 3 separate batches, but I probably could have done it in 2. Per serving, it has 271 calories, 11g carbohydrates, 4g fiber, 26g protein, and 14g fat.
If you want to reduce the fat in this recipe, you can cut the oil in this recipe. You can even try spraying the chicken and vegetables with cooking oil instead.










Oven Directions
- Preheat the oven to 400F.
- Chop up all the chicken and vegetables into bite-sized pieces.
- Place chopped-up chicken and vegetables in a large mixing bowl.
- Add avocado oil, garlic, salt, and pepper to the large mixing bowl and mix together.
- Place chicken and veggies on a cookie sheet and bake for 25 minutes.
- Remove from the oven and enjoy!
Substitutions
For this recipe, you can basically use any of your favorite vegetables for your favorite toppings. If you don’t like radishes, you can use broccoli florets instead. Can’t find zucchini, use yellow squash instead. Not a huge fan of onions? Swap them for mushrooms instead. Don’t be afraid to try a new way of customizing your version of this healthy air fryer chicken recipe.
What to serve with Air Fryer Chicken and Veggies
This chicken and vegetable recipe is delicious just as it is. It’s a high-protein, low-carb recipe, great if you’re following a low-carb or keto diet.
It doesn’t really need a side dish, but you can always serve it with white rice or cauliflower rice.

- Store leftover chicken and veggies in a glass airtight container in the refrigerator for up to 5 days.
- For meal prep, you can freeze a meal up to 3 months. Choose a safe container before putting it in the fridge. You can reheat on a stove top, microwave, or the best way: air fry.

Transfer the chicken and veggies to a microwave-safe plate and microwave on high for 1.5-2 minutes or until the internal temperature reaches 165F.
