What does Spatchcock mean?
Spatchcock is a term used to describe a method of preparing poultry, in which the backbone is removed and the bird is flattened before cooking.
This technique is also known as “butterflying” and is typically done with chickens. It can also be done with other birds such as quail, pheasant, or turkey. By spatchcocking the bird, it cooks more evenly and quickly, resulting in crispy skin and juicy meat.
